A few weeks ago I cooked up a boneless pork shoulder in the crock pot. I used a recipe from one of my favorite well known food bloggers and honesty while the meat was perfectly done I thought it could have used a little more flavor. This was the first thing I cooked in my new extra big crock pot complete with timed cooking and all! I love it! I have been using tons since Shane brought it home to me.
The first night I cooked the pork we had tacos, with salsa, jalapeno, cabbage etc. yum!
I have made a few things out of the remainder but my favorite was some Tex Mex rice bowls.
Plus they were super easy.
2-4 cups cooked rice ( I used brown)
1 can (or equivalent frozen) black beans
1 C. frozen corn
1/2 cup chopped onion
1/2 cup chopped pepper
1 chopped jalapeno
2-3 cloves garlic minced
1 heaping tsp chili powder
1 heaping tsp cumin
splash apple cider vinegar
1 cup grated cheese
chopped cilantro
chopped avocado
salsa
