I feel so lucky to have fresh eggs, it has been a long wait from raising chicks to grown egg laying hens but worth it. Not only do I get a laugh from my hens each day but nothing compares to fresh, natural incredible egg. Every time we break one open we are amazed at how thick an strong the shell is how bright the yolk etc.
I wanted to share a little trick. I am told that fresh eggs don't peel well when hard boiled. Tonight was the first time I have hard boiled one of our eggs but I saw a trick recently and decided to try it out.
When boiling the eggs add a 1/4 tsp of baking soda to the water. Simple as that!
My result, perfectly hard boiled egg that peeled well. Wish I would have taken a picture.
I will try this method again this weekend when making deviled eggs for Easter maybe I will remember to snap some photos then.
