I have been making granola for about a year now. Some better then others but the best thing about it is you can add whatever you like and keep the fat and sweeteners to a minimum making it much healthier then store bough versions.
This is he first time I have made it in the crock pot, I saw the idea on pinterest and let me tell you easy as can be!
I am going to name this granola Sunshine granola because the sun is shining for the first time in days!!
Sunshine Granola
4 c. oats
1 c. rice crispies
1 c. puffed millet (cheap and found on the natural cereal isle)
1/4c raw Pepita
1/4 c slivered almonds
1/4 c cashews (I had probably half that amount)
3/4 c dried fruit (I used raisins, cranberries and blueberries)
1/8 c sesame seeds
1/4 c coconut flakes
1 tbs cinnamon
2-3 tbs ground flax
2 tbs wheat germ
zest of one orange (optional)
Wet ingredients
1 1/2 tbs melted butter
enough fruit juice to equal 1/2 cup with butter
1/3 cup sweetener I used agave but you could use honey maple syrup or brown sugar
2-3 tbs of homemade preserves (or store bought of course, but you may want to cut back on sugar) You could also use applesauce and usually I do but I had a big jar of blackberry jam in the fridge so I tried that.
You should have about 1 cup of wet ingredients.
Mix all the dry ingredients in the crock pot, melt the butter and put in the rest of the wet ingredients and mix well. Pour over the oat mixture and mix to coat well. Turn on the slow cooker to high for 3-4 hours with a skewer or wooden spoon under the lid to vent moisture and stir a few times. Let granola cool on a cookie sheet and store in an airtight container.
As I said play with your ingredients to come up with flavors you like! You could add vanilla, maple etc options are limitless and easily adaptable to what you have in your pantry.
