I cannot make claim to this recipe but it is wonderful. A great take a long lunch or just a change up to the regular lettuce, mushroom and tomato salad with dinner.
I got the recipe from food networks Melissa d' Arabian, if you haven't been introduced to her yet.... its time. She specializes in feeding a family for under 10 dollars and has some great money saving tips/ideas but really what I like is every recipe I have tried is wonderful!
Broccoli Cauliflower Salad
1/4 sliced red onion Soaked in ice water for 10 mins to make it milder
2 slices bacon cut in small pieces cooked crispy
1/2 bunch of broccoli cut into florets
1/2 head of cauliflower cut into small florets
2tbs sugar
1tbs red wine vinegar
1tsp Dijon mustard (I used at least 1 TBS)
2 tbs vegetable oil
1/4 cup mayo (I may have used a little less)
1/2 tsp seafood seasoning
Salt and Pepper
Drain the onions after soaking them, mix the broccoli, cauliflower and onion in a bowl. Mix dressing ingredients and pour over veggies, toss in bacon and mix to incorporate bacon and dressing. Salt and pepper to taste. I made this a few hours ahead to let the veggies soak up the dressing a bit! Yum yum!!!
