Sweet potato burgers

I had a sweet potato that was growing sprouts! It was begging for me to use it. I also had some sprouted grain hamburger buns ( I have a lot, I was in the mood for a salmon burger the other night). So naturally sweet potato burgers. Now I have never had a sweet potato burger, but I love sweet potatoes and I also like a good veggie burger so I am hoping that this will be a good mix!

1 sweet potato cooked and peeled
1/4c whole wheat flour
1/4c oats
1/4c chopped almonds
1tbs flax
1/4c panko bread crumbs
1c white beans - I think you could use black beans too I mean that's a classic pairing this is just what I had on hand.
2cloves garlic chopped
1 1/2tsp chili powder
1 tsp grill seasoning or some kind of all purpose seasoning
1tsp cumin
1tbs Miso
salt and pepper

Put all ingredients in a bowl and mash together. I used a potato masher at first but then went to my hands! Form a patty and bake in a 350 oven for 15 mins per side or cook in a little olive oil in a pan.
I made zucchini oven fries with it and had maybe a tbs of egg left so I dumped that in to. But I ended up adding a little more oats after that. I wanted it to be stiff enough to easily form a patty.

These had a great consistency and they stayed together really well. Cooking them in the oven they got perfectly crispy on the outside. Next time I will try adding some additional veggies like grated onion, maybe some chopped jalapeno......
